This light, floral honey is highly prized as it rarely crystallizes. Salvatore Vultaggio does a remarkable job with his small operation of no more than 600 bee hives, which he moves all over Western Sicily, changing locations with the seasons. Using techniques learned from his father, Salvatore gently extracts the honey from the honeycomb with a centrifuge rather than the harmful heat method in order to preserve all of the beneficial amino acids and enzymes as well as the delicate, distinctive flavors.
